“Metamorphoses” performed in the UMBC Theatre
Choice
#1 Homemade
Ravioli stuffed with Butternut Squash dressed in light apple cider sauce with
chopped sage, roasted pine nuts an shaved Parmesan
cheese
Choice #2 Beef Wellington – Beef tenderloin coated in
chopped mushrooms and fresh herbs, wrapped in flaky puff pastry dough
and baked golden brown. Sliced into
medallions and served with Port wine demi
glace’. Parmesan whipped potatoes
Choice #3 Fresh
Grouper filet lightly seasoned and pan seared; topped with crab-mango salsa and
served with light passion fruit sauce, coconut rice pilaf.
All served with salad of mixed greens tossed in
wild berry vinaigrette with crumbled bleu cheese, carmelized pecans, Mandarin oranges, cucumber discs and
tomato wedge accompanied by rolls and butter.
Dessert is warm chocolate bread pudding with French vanilla ice cream,
Kentucky bourbon carmel
sauce and Chantilly cream.
